After sorting the products we collect from the region in October, November and December according to their size, the olives of the ideal size are separated for you. The olives, which are washed many times with plenty of water, are placed in water-filled canisters prepared with only natural rock salt for brine. It is kept in clean, cool and dark rooms for 9 - 10 months until it reaches the ripeness that best suits your taste. The ready-made Black Pickled Olives are filtered and transferred to the jars we have prepared for our valued customers in a completely natural and freshest way. Since we do not apply any chemicals, caustics or heat treatments, some olives may be light colored when they first come out of the jar. Since it is prepared with natural fermentation methods, its colors will darken as it comes into contact with air, so you can consume it with peace of mind.
